I had this great idea for a blog post. It was going to be
about the beach and all the good things you can pick up at the beach, like a
tan and a friends Southern Living magazine with really great recipes. Then I
was going to talk about this cool cole slaw recipe that I was dying to
try and how a friend’s fish fry that gave me the opportunity. Well, all that stuff
happened and I made the slaw, but it was a complete disaster. It was my fault,
of course. Once again, I failed to truly read the recipe. I think my life has become
too busy and I’m failing to really examine and live the details which is so not
me.
Regardless, I’m not perfect and I thought it would be fun to
share my disaster. I’m not in this alone right? We’ve all had them.
The recipe was Chipotle-Cilantro slaw. I would be using a
new ingredient: chipotle chile peppers
in adobo sauce. I read the recipe to mean that I needed two cans. As I was
prepping the slaw I thought to myself that it seemed like a lot of peppers and
perhaps it might be too spicy but I soldiered on. Well, the slaw was HOT, too
hot to enjoy. When I reread the recipe I understand how I could have
misunderstood but after the final product, it is clear that I was only supposed
to use two of the peppers from one can, not two cans.
I’m going to give it another go making sure to amend
my pepper issue. Here is the recipe if the thought of the smoky heat of an
