Buffalo Meat Sauce


I’m not a fan of cooking for just myself, but a girl has to eat, right? I was checking out my freezer Sunday night trying to plan my dinners for the week so I could stop by the grocery store and get the needed vegetables and essentials needed to complete what meats the freezer presented. I had a pound a ground buffalo that the man-love likes to make burgers or chili with. I wasn’t feeling either of those meals but wondered how the meat would taste as a meat sauce for pasta. The answer – awesome!

I work. So meals during the week need to be fast after a full day on the joby job and a stop to get my fitness on after. This is one of those not fancy, quick fix meals.

First I sautéed an onion with a little olive oil, salt and pepper. After the onions turned translucent I added the buffalo meat to brown with a little dried oregano. Once the meat was cooked through I added a jar of my favorite pasta sauce. I had some ricotta cheese in the fridge so I tossed a hefty scoop of that in the sauce as well. While the pasta boiled the sauce simmered. In less than thirty minutes I was enjoying my meal.

The beauty was I had enough pasta left over for lunch the next day and there was enough sauce for me to use it later in the week over ravioli.
