Happy Cinco de Mayo - Strawberry Cucumber Serrano Salsa

For those looking for a less traditional way to celebrate Cinco de Mayo take a look at this recipe for Strawberry Cucumber Serrano Salsa courtesy of Satisfied (a great food blog I follow). I will probably add more cilantro because I love.love.love cilantro!

Strawberry Cucumber Serrano Salsa

1 Serrano pepper- finely chopped (about 1 Tablespoon)
1/4 cup red onion - extra small dice
4 limes - zested and juiced (about 1/4 cup of juice)
2 cups fresh strawberries - extra small dice
1 cup Hot House English cucumber - skin on extra small dice
2 Tablespoons of grape seed oil
1/2 cup fresh cilantro - chopped
3/4 teaspoon kosher salt
1/4 black pepper

In a medium bowl combine all ingredients and stir well.
Allow salsa to sit for at least 20 minutes before serving.
If you are not serving the salsa relatively soon reserve the salt and lime juice until ready to eat. The salt and lime juice will break down the strawberries and they will become mushy.

Perfect Weekend for the 5th Annual AT&T Spring Town Point Virginia Wine Festival

Despite the cold temperatures (and rain) of today, I think it is safe to say spring has sprung. My grass is green so that is all I need to know to establish the season is on us. In a few short months the heat of summer will be here and my grass will once again turn a not so beautiful shade of brown. (Unless someone reading this wants to dig me a well, city water gets too expensive.)

Festevents also cues me to the arrival of spring with the 5th Annual AT&T Spring Town Point Virginia Wine Festival which is this weekend, Saturday May 7 from 11 a.m. to 6 p.m. I have so many great memories associated with wine fests at Town Point Park. I’m sure this weekend will hold even more with much to celebrate in our camp.

At this point I consider myself a pro at this event. Regardless if I have a general admission, tasting or VIP ticket I rarely taste and go straight to buying bottles. After year one I learned red is not a good decision for an all-day drinking event, especially when wearing a new white coat. (Duh!) Two festivals ago I discovered a great sparkling wine from Barboursville and that has been my go to every event since.

Barboursville describes its Brut as a classic sparkling wine of distinct Northern Italian influence, the non-vintage Barboursville Brut is estate grown Chardonnay (80%) which has avoided malolactic fermentation and any exposure to oak, and Pinot Noir (20%) from some of our oldest vines.

Festival guests will enjoy a blissful afternoon (the weather forecast looks awesome) of sampling a wide selection of Virginia Wines with live music by Mike Proffitt. All wines presented during the festival are available for purchase by the bottle or the case until 5 p.m. Wine sampling ends at 4:30 p.m.
